Roasted Fish with Cherry Tomatoes: A Simple and Delicious Recipe

This roasted fish with cherry tomatoes is a delightful and colorful dish that highlights the freshness of whole fish paired with sweet, caramelized cherry tomatoes.   • 4 whole fish (such as snapper or trout), cleaned and scaled
  • 2 cups cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1 lemon, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (optional, for a bit of heat)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the cleaned and scaled fish under cold water and pat dry with paper towels.
  3. In a small bowl, mix salt, pepper, and dried oregano. Rub this mixture generously inside and outside of each fish.
  4. Stuff each fish with a few slices of lemon and some minced garlic.
  5. In a large mixing bowl, combine halved cherry tomatoes, remaining minced garlic, chopped parsley, olive oil, salt, pepper, and red pepper flakes. Toss until well coated.
  6. Spread the seasoned cherry tomatoes evenly on a large baking sheet, leaving space for the fish.
  7. Lay the seasoned fish on top of the cherry tomatoes. Add any leftover lemon slices on top of the fish.
  8. Roast in the preheated oven for about 25-30 minutes, or until the fish is opaque and flakes easily with a fork.
  9. Ensure the internal temperature reaches 145°F (63°C) or check that the fish is cooked through and the skin is crispy.
  10. Carefully remove the baking sheet from the oven.
  11. Transfer each fish onto a serving platter using a spatula.
  12. Spoon the roasted cherry tomatoes around the fish on the platter.
  13. Sprinkle additional fresh parsley over the top for color and freshness.
  14. Enjoy fresh out of the oven, paired with crusty bread or a simple green salad.
  15. Store any leftovers in an airtight container in the refrigerator. They can be enjoyed cold or gently reheated in the oven.
