1 cup almond flour (or oat flour)
1/2 cup vanilla protein powder (plant-based or whey)
1/4 cup natural peanut butter (or almond butter)
2–3 tablespoons maple syrup or honey
1 tablespoon coconut oil, melted
1 teaspoon vanilla extract
Pinch of sea salt
1/4 cup mini dark chocolate chips
In a large bowl, mix together almond flour, protein powder, and a pinch of salt.
Stir in the peanut butter, maple syrup, melted coconut oil, and vanilla extract until a dough forms.
Gently fold in the mini chocolate chips.
Taste and adjust: add a splash of almond milk if dough feels too dry.
Enjoy immediately or chill in the refrigerator for 10–15 minutes for a firmer texture.
For a nut-free version, swap peanut butter for sunflower seed butter.
If your protein powder isn’t sweetened, you may want to add an extra tablespoon of maple syrup.
Feel free to fold in extras like chopped nuts, chia seeds, or dried cranberries.
Store leftovers in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
