Ingredients

Scale
  • 1 cup almond flour (or oat flour)

  • 1/2 cup vanilla protein powder (plant-based or whey)

  • 1/4 cup natural peanut butter (or almond butter)

  • 23 tablespoons maple syrup or honey

  • 1 tablespoon coconut oil, melted

  • 1 teaspoon vanilla extract

  • Pinch of sea salt

  • 1/4 cup mini dark chocolate chips

Instructions

  • In a large bowl, mix together almond flour, protein powder, and a pinch of salt.

  • Stir in the peanut butter, maple syrup, melted coconut oil, and vanilla extract until a dough forms.

  • Gently fold in the mini chocolate chips.

  • Taste and adjust: add a splash of almond milk if dough feels too dry.

  • Enjoy immediately or chill in the refrigerator for 10–15 minutes for a firmer texture.

Notes

  • For a nut-free version, swap peanut butter for sunflower seed butter.

  • If your protein powder isn’t sweetened, you may want to add an extra tablespoon of maple syrup.

  • Feel free to fold in extras like chopped nuts, chia seeds, or dried cranberries.

  • Store leftovers in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
