Mediterranean Chicken Patties

Bright, juicy, and packed with Mediterranean flavor, these Mediterranean Chicken Patties come together in under 30 minutes! Perfect for a healthy weeknight dinner, easy meal prep, or a crowd-pleasing appetizer. Fresh herbs, lemon zest, and feta make these patties anything but boring!!

Ingredients

  • 1 pound ground chicken

  • 1/3 cup crumbled feta cheese

  • 2 tablespoons chopped fresh parsley

  • 2 tablespoons chopped fresh dill

  • 1 tablespoon chopped fresh mint (optional)

  • 1 small red onion, finely diced

  • 2 garlic cloves, minced

  • 1 teaspoon lemon zest

  • 1 tablespoon lemon juice

  • 1 teaspoon dried oregano

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 tablespoons olive oil (for cooking)

Instructions

  • In a large bowl, gently mix together the ground chicken, feta, parsley, dill, mint (if using), red onion, garlic, lemon zest, lemon juice, oregano, salt, and pepper.

  • Shape the mixture into 8 small patties or 4 larger ones.

  • Heat olive oil in a skillet over medium heat until shimmering.

  • Cook the patties for 4-5 minutes per side, or until golden brown and cooked through (internal temperature should reach 165°F).

 

  • Serve warm with your favorite sides or tucked into pita pockets!

Notes

  • Make Ahead: Shape patties up to a day ahead and refrigerate until ready to cook.

  • Baking Option: Bake at 400°F for 18-20 minutes, flipping once halfway.

  • Substitutions: Swap feta for goat cheese, or use ground turkey or lamb instead of chicken.

 

  • Serving Suggestion: These are delicious in a bowl with hummus and roasted veggies!
