1 pound ground chicken
1/3 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill
1 tablespoon chopped fresh mint (optional)
1 small red onion, finely diced
2 garlic cloves, minced
1 teaspoon lemon zest
1 tablespoon lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil (for cooking)
In a large bowl, gently mix together the ground chicken, feta, parsley, dill, mint (if using), red onion, garlic, lemon zest, lemon juice, oregano, salt, and pepper.
