2 cups mashed potatoes (chilled or freshly made)
1 cup shredded cheddar cheese
2 large eggs
1/4 cup grated Parmesan cheese
1/4 cup all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped chives or green onions (optional)
Non-stick spray or butter (for greasing)
Preheat oven to 400°F (200°C). Grease a mini muffin tin generously with non-stick spray or butter.
In a large bowl, mix mashed potatoes, shredded cheddar, Parmesan, eggs, flour, garlic powder, onion powder, salt, pepper, and chives (if using) until well combined.
