  • 1 cup shredded cheddar cheese

  • 2 large eggs

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup all-purpose flour

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 tablespoons chopped chives or green onions (optional)

  • Non-stick spray or butter (for greasing)

Instructions

  • Preheat oven to 400°F (200°C). Grease a mini muffin tin generously with non-stick spray or butter.

  • In a large bowl, mix mashed potatoes, shredded cheddar, Parmesan, eggs, flour, garlic powder, onion powder, salt, pepper, and chives (if using) until well combined.

  • Scoop the mixture into the prepared muffin tin, filling each cup about three-quarters full.

  • Bake for 20–25 minutes, or until the tops are golden and slightly crisp.

  • Let cool for 5 minutes before removing from the pan. Serve warm and enjoy every cheesy bite!!

Notes

  • Chilling freshly made mashed potatoes makes the mixture easier to work with!

  • Swap in your favorite cheeses like mozzarella, gouda, or pepper jack for fun flavor twists.

  • Want them even crispier? Pop under the broiler for 1–2 minutes — just keep a close eye!
