8 oz fettuccine or linguine
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
2 tbsp butter
4 cloves garlic, minced
1 tsp red pepper flakes (optional, to taste)
½ cup sun-dried tomatoes in oil, chopped
1 cup heavy cream
½ cup low-sodium chicken broth
½ cup grated Parmesan cheese
1 tsp Italian seasoning
Salt and pepper, to taste
Fresh basil, chopped (for garnish)
Extra Parmesan (for serving)
Cook the pasta in a large pot of salted boiling water until al dente. Reserve ½ cup of pasta water, then drain.
In a large skillet, heat olive oil over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side, until pink and opaque. Remove and set aside.
Lower the heat and add butter to the same skillet. Sauté garlic and red pepper flakes until fragrant, about 1 minute.
Stir in chopped sun-dried tomatoes and Italian seasoning. Cook for another minute.
Pour in chicken broth and heavy cream. Bring to a simmer, then stir in Parmesan. Let it thicken for 3–5 minutes.
Add shrimp and pasta to the sauce. Toss gently to coat. Use reserved pasta water to loosen sauce if needed.
Top with fresh basil and extra Parmesan before serving. Enjoy while warm!
You can use any pasta shape you love—penne, spaghetti, or linguine all work great.
For a lighter version, sub half-and-half for heavy cream, though the sauce may be thinner.
Add baby spinach or arugula during the final minute of cooking for extra greens.
Want it extra spicy? Add a pinch of cayenne or a splash of hot sauce.
