  • 1/2 cup of sweetened condensed milk

  • 1 tablespoon of lemon zest (from about 1 lemon)
  • 1 teaspoon of vanilla extract
  • 1/2 cup of powdered sugar (for rolling)
  • Optional: 1/4 cup of white chocolate chips (for extra sweetness)

Instructions

  1. Start by gathering all your ingredients on the counter.
  2. In a large mixing bowl, combine the crushed digestive biscuits and cocoa powder. Use a whisk to mix them together until they are well combined.
  3. Add the sweetened condensed milk to the dry mixture and stir with a spatula until the mixture starts to come together.
  4. Pour in the melted unsalted butter and mix well until the butter is fully incorporated.
  5. Add the fresh lemon juice and lemon zest, and stir until everything is well combined.
  6. If using white chocolate chips, fold them into the mixture now.
  7. Ensure the batter is thick and slightly sticky; add more crushed biscuits if it feels too wet.
  8. Cover the mixing bowl with plastic wrap or a clean kitchen towel.
  9. Place the bowl in the refrigerator for at least 30 minutes.
  10. Prepare your workspace by lining a baking sheet with parchment paper.
  11. After 30 minutes, take the mixture out of the refrigerator.
  12. Pour the powdered sugar into a shallow bowl for coating the truffles.
  13. Using a small cookie scoop or your hands, take a tablespoon-sized amount of the mixture and roll it into a ball.
  14. Gently roll the truffles in the powdered sugar until they are fully coated.
  15. Place the coated truffles on the prepared baking sheet and repeat until all the mixture is rolled and coated.
  16. Add an extra touch of lemon zest on top of each truffle for color and flavor.
  17. Place the baking sheet back in the refrigerator for another 15-20 minutes.
  18. Clean up your workspace while the truffles are chilling.
  19. After the final chill, take the truffles out of the refrigerator.
  20. Transfer the truffles to a decorative plate or a gift box.
  21. Store the lemon truffles in an airtight container in the refrigerator for up to a week.
