Impossible Apple Pie

This Impossible Apple Pie is a cozy, magical dessert where the batter forms its own soft crust while baking—no rolling pins, no fuss, just pure apple-cinnamon bliss! Perfect for busy days when you need a comforting homemade treat without all the effort. 🍎✨

Ingredients

Scale
  • 4 medium apples, peeled and thinly sliced (Granny Smith or Honeycrisp)

  • 3/4 cup granulated sugar

  • 1/2 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon salt

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup (1 stick) unsalted butter, melted

Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease a 9-inch pie dish.

  • Peel and thinly slice the apples. Spread them evenly in the pie dish.

  • In a bowl, whisk together sugar, flour, baking powder, cinnamon, nutmeg, and salt.

  • Stir in the eggs, vanilla extract, and melted butter until just combined.

  • Pour the batter evenly over the apples (it’s okay if not every slice is covered).

  • Bake for 40–45 minutes, until the top is golden and a toothpick inserted comes out mostly clean.

  • Let cool for at least 15 minutes before slicing. Serve warm or at room temperature!

Notes

  • Gluten-Free Option: Use a 1:1 gluten-free baking flour.

  • Dairy-Free Option: Swap butter for coconut oil or a plant-based alternative.

  • Extra Flavor: Add a sprinkle of cinnamon sugar on top before baking!

  • Make Ahead: Bake a day in advance and gently reheat at 300°F before serving.

  • Storage: Keep leftovers covered at room temp for up to 2 days, or refrigerate for 5 days.
