4 boneless, skinless chicken breasts (or thighs)
Salt and pepper, to taste
2 tablespoons olive oil
1 block (about 8 oz) feta cheese
1/2 cup Greek yogurt
2 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon dried oregano
For the Hot Honey:
1/3 cup honey
1 teaspoon red pepper flakes (adjust to taste)
1 tablespoon apple cider vinegar
Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
Season the chicken with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Sear chicken until golden on both sides, about 2–3 minutes per side.
In a blender or food processor, blend feta, Greek yogurt, minced garlic, lemon juice, and oregano until smooth.
Spread a thin layer of feta sauce on the bottom of the baking dish. Place the seared chicken on top and cover with the remaining sauce.
Bake for 20–25 minutes or until chicken reaches an internal temperature of 165°F.
Meanwhile, gently warm honey, red pepper flakes, and apple cider vinegar in a small saucepan for 2–3 minutes to create the hot honey.
Once the chicken is done, drizzle the hot honey generously over the top.
