  • 1½ cups rolled oats

  • ¾ cup oat flour (or finely blended oats)

  • 1½ teaspoons baking powder

  • 1 teaspoon cinnamon

  • ¼ teaspoon salt

  • 2 large eggs

  • ½ cup unsweetened applesauce

  • ¼ cup pure maple syrup

  • ½ cup milk (dairy or plant-based)

  • 2 tablespoons coconut oil, melted

  • 1 teaspoon vanilla extract

  • 1 large apple, peeled and diced small (plus extra slices for topping if desired)

Instructions

  • Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper or lightly grease it.

  • In a large bowl, mix together the rolled oats, oat flour, baking powder, cinnamon, and salt.

  • In another bowl, whisk the eggs, applesauce, maple syrup, milk, melted coconut oil, and vanilla extract until smooth.

  • Pour the wet ingredients into the dry ingredients and stir until just combined.

  • Gently fold in the diced apple.

  • Pour the batter into the prepared baking dish and spread it evenly. Top with extra apple slices if you like.

  • Bake for 30–35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

 

  • Let cool for at least 15 minutes before slicing into squares. Enjoy!
