Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 slices of your favorite bread (ciabatta, sourdough, or whole grain work well)
  • 4 slices of cheese (cheddar, Swiss, or provolone)
  • 1 cup fresh spinach or arugula
  • 1 medium tomato, sliced
  • 1 avocado, sliced (optional)
  • Mayonnaise or your favorite sauce (optional)

Instructions

  1. Marinate the Chicken: In a large bowl or resealable plastic bag, combine chicken breasts with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Coat evenly and marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  2. Preheat the Grill: Preheat your grill to medium-high heat or heat a grill pan on the stove.
  3. Grill the Chicken: Remove chicken from marinade and grill for 6-7 minutes on one side. Flip and cook for another 6-7 minutes until the internal temperature reaches 165°F (75°C).
  4. Rest the Chicken: Remove from grill and let rest for 5 minutes.
  5. Toast the Bread: Toast the bread on the grill or in a toaster, if desired.
  6. Add Cheese: Place a slice of cheese on each piece of bread, allowing it to melt slightly if toasting on the grill.
  7. Slice the Chicken: Slice the rested chicken into strips or leave whole.
  8. Layer the Ingredients: Start with the bottom slice of bread, add spinach or arugula, followed by sliced chicken and avocado (if using).
  9. Add Tomato: Layer fresh tomato slices on top.
  10. Spread the Sauce: Spread mayonnaise or your favorite sauce on the top slice of bread.
  11. Top It Off: Place the top slice of bread on the sandwich and secure with a toothpick if desired.
  12. Grill the Assembled Sandwich (Optional): Heat a grill pan or skillet over medium heat, add olive oil or butter, and grill the sandwich for 3-4 minutes on each side until golden brown and cheese is melted.
  13. Check for Doneness: Ensure cheese is melted and bread is crispy; grill longer if necessary.
  14. Serve: Slice in half if desired and serve immediately.

Notes

  • Feel free to customize the sandwich with your favorite toppings or sauces.
  • For a spicier kick, consider adding jalapeños or a spicy sauce.
