For the Chicken Bites:
1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon smoked paprika
1 teaspoon garlic powder
½ teaspoon dried oregano
Salt and pepper, to taste
For the Creamy Garlic Sauce:
4 cloves garlic, minced
2 tablespoons butter
1 cup heavy cream
¼ cup grated Parmesan cheese
Salt and pepper, to taste
Optional: pinch of red pepper flakes
Marinate the chicken: In a large bowl, whisk together olive oil, lemon juice, smoked paprika, garlic powder, oregano, salt, and pepper. Add chicken and toss until well-coated. Let marinate for at least 15 minutes.
Grill the chicken: Heat a grill or grill pan over medium-high heat. Grill chicken bites for 3-4 minutes per side, or until nicely charred and cooked through (internal temp 165°F). Transfer to a plate and cover to keep warm.
Make the sauce: In a saucepan over medium heat, melt butter. Add garlic and sauté for 1-2 minutes until fragrant. Pour in heavy cream and stir in Parmesan. Simmer for 5-6 minutes, stirring frequently, until the sauce thickens. Season with salt, pepper, and red pepper flakes (if using).

Chicken thighs yield juicier bites but chicken breasts work great too.
For a lighter version, swap in half-and-half or Greek yogurt for the cream.
