4 boneless, skinless chicken breasts
2 tablespoons butter
8 oz mushrooms (white button or cremini), sliced
3 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 cup mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
Salt and pepper, to taste
1 tablespoon olive oil
Fresh parsley, chopped (for garnish)
Preheat your oven to 375°F (190°C).
In a skillet over medium heat, melt the butter. Add the sliced mushrooms and minced garlic. Cook until mushrooms are golden and tender, about 5 minutes. Stir in the Italian seasoning and remove from heat.
