2 boneless, skinless chicken breasts
Juice of 1 lemon
2 tbsp olive oil
1 garlic clove, minced
1 tsp dried oregano
Salt and pepper, to taste
1 cup cooked quinoa
1/2 cup cherry tomatoes, halved
1/2 cucumber, thinly sliced
1/4 red onion, thinly sliced
1/4 cup crumbled feta cheese
1 handful arugula (or baby spinach)
In a bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, and pepper to make a marinade.
Add chicken breasts to the bowl and coat well. Let marinate for 20–30 minutes.
