Ingredients

Scale

Ingredients

  • 2 salmon fillets (about 6 oz each), skin removed

  • Salt and black pepper, to taste

  • 2 tablespoons olive oil

  • 34 garlic cloves, minced

  • 1 cup heavy cream

  • ½ cup chicken broth or reserved pasta water

  • ½ cup grated Parmesan cheese

  • 1 tablespoon lemon juice (plus optional zest)

  • 8 oz fettuccine or linguine

  • 2 tablespoons butter

  • Fresh parsley, chopped (for garnish)

  • Optional: pinch of red pepper flakes

Instructions

Instructions

  1. Cook the pasta: Boil a large pot of salted water. Cook pasta until al dente according to package instructions. Reserve ½ cup of pasta water before draining.

  2. Sear the salmon: Pat salmon dry and season with salt and pepper. Heat olive oil in a large skillet over medium heat. Sear salmon for about 4 minutes per side, until golden and just cooked through. Remove and set aside.

  3. Make the sauce: In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute. Pour in the cream and broth (or pasta water), and bring to a gentle simmer.

  4. Add flavor: Stir in Parmesan, lemon juice, and red pepper flakes (if using). Simmer until sauce thickens slightly, then season to taste.

  5. Combine: Flake the cooked salmon into large pieces and return to the pan. Add pasta and gently toss to coat in the sauce.

  6. Finish and serve: Sprinkle with chopped parsley and lemon zest. Serve warm and enjoy every creamy, garlicky bite!

Notes

Notes

  • Use freshly grated Parmesan for the smoothest sauce—pre-grated just won’t melt the same!

  • Don’t skip reserving pasta water—it helps the sauce cling perfectly to the noodles.

  • Want to add greens? A handful of baby spinach stirred in at the end wilts beautifully into the sauce.

  • For a dairy-free version, swap cream with coconut cream and use a plant-based Parmesan alternative.

  • If you’re reheating leftovers, a splash of cream or milk will bring the sauce back to life.
