4 cod fillets (5–6 oz each)
1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, minced
1 tablespoon fresh ginger, grated
2 tablespoons red curry paste (or yellow for milder flavor)
1 teaspoon ground turmeric
1 can (14 oz) full-fat coconut milk
1 tablespoon fish sauce or soy sauce
Juice of 1 lime
1 teaspoon brown sugar (optional)
Salt and pepper, to taste
Fresh cilantro and lime wedges for garnish
Preheat your oven to 375°F (190°C). Pat cod fillets dry with paper towels and season lightly with salt and pepper.
