Coconut Curry Baked Cod

This Coconut Curry Baked Cod is a dreamy weeknight dinner with tropical flair! Flaky cod fillets are baked in a rich, spiced coconut curry sauce infused with garlic, lime, and ginger. It’s hearty, comforting, and comes together in under 40 minutes — perfect served with rice, naan, or fresh greens!

  • 4 cod fillets (56 oz each)

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 1 tablespoon fresh ginger, grated

  • 2 tablespoons red curry paste (or yellow for milder flavor)

  • 1 teaspoon ground turmeric

  • 1 can (14 oz) full-fat coconut milk

  • 1 tablespoon fish sauce or soy sauce

  • Juice of 1 lime

  • 1 teaspoon brown sugar (optional)

  • Salt and pepper, to taste

  • Fresh cilantro and lime wedges for garnish

Instructions

 

  1. Preheat your oven to 375°F (190°C). Pat cod fillets dry with paper towels and season lightly with salt and pepper.

  2. In a saucepan, heat olive oil over medium heat. Add onion and sauté for 3–4 minutes until soft.

  3. Stir in garlic and ginger; cook for 1 minute.

  4. Add curry paste and turmeric. Let it cook for 1–2 minutes until fragrant.

  5. Pour in coconut milk, fish sauce, lime juice, and brown sugar. Simmer the sauce gently for 5 minutes. Adjust seasoning to taste.

  6. Place cod fillets in a single layer in a baking dish. Pour the warm coconut curry sauce over the fillets.

  7. Cover loosely with foil and bake for 15–18 minutes, or until cod flakes easily with a fork.

  8. Garnish with fresh cilantro and lime wedges. Serve hot with rice, naan, or vegetables!

Notes

 

  • Swap cod for halibut, tilapia, or even salmon if preferred.

  • Add chili or cayenne for extra heat.

  • Light coconut milk works if you’re reducing fat, but full-fat adds the best richness.

  • Don’t overbake the cod — it cooks quickly and stays tender when timed right!

  • The sauce can be made up to 2 days ahead for meal prep ease.
