2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar (optional)
1/2 teaspoon salt
1 3/4 cups cold buttermilk
1 cup fresh or frozen blueberries (no need to thaw)
1/2 cup (1 stick) unsalted butter, melted
Preheat your oven to 450°F (232°C). Pour the melted butter into an 8×8 or 9×9-inch baking dish and set aside.
In a large bowl, whisk together the flour, baking powder, sugar (if using), and salt.
Pour in the cold buttermilk and stir gently until just combined — the batter should be slightly lumpy.
Fold in the blueberries carefully to avoid crushing them.
Pour the batter over the melted butter in the dish. Use a spatula to gently spread it to the corners.
Lightly score the batter into 9 squares using a butter knife (this helps portion later).
