Blueberry Basil Goat Cheese Panini: A Delicious Twist on a Classic Sandwich

  • 4 slices of rustic bread (like ciabatta or sourdough)
  • 4 oz goat cheese, softened
  • 1 cup fresh blueberries
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Butter for grilling

Instructions

  1. In a medium bowl, combine the fresh blueberries, honey, and balsamic vinegar. Gently mash the blueberries with a fork, just enough to release some of their juices while still keeping some whole.
  2. In another bowl, combine the softened goat cheese and chopped fresh basil leaves. Mix until well combined.
  3. Taste the blueberry mixture and season it with a pinch of salt and pepper.
  4. Lay out the four slices of rustic bread. Lightly brush one side of each slice with olive oil for a crispy exterior.
  5. On the unbrushed side of two slices, spread the goat cheese mixture evenly.
  6. Spoon the blueberry mixture over the goat cheese on the two slices, being careful not to overload.
  7. Place the other two slices of bread on top, brushed side up, and press down gently.
  8. Preheat your panini press or skillet over medium heat. Add a little butter to the skillet if using.
  9. Place the assembled panini in the press or skillet. Grill for about 3-4 minutes on each side, or until golden brown and crispy.
  10. If using a skillet, flip the panini halfway through cooking to ensure even toasting.
  11. Carefully remove the panini and let them cool for a minute before slicing diagonally.
  12. Drizzle with extra honey or balsamic reduction and sprinkle with fresh basil leaves if desired.
  13. Enjoy the panini warm, paired with a light salad or crispy chips.
