4 strips thick-cut bacon, chopped
3 cups cooked and chilled white rice (day-old rice preferred)
2 eggs, lightly beaten
1 cup frozen peas and carrots
3 green onions, sliced
2 tablespoons soy sauce (plus more to taste)
1 tablespoon sesame oil
1 teaspoon garlic powder (optional)
Freshly ground black pepper, to taste
In a large skillet or wok, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving about 1 tablespoon of bacon fat in the pan.
Pour the beaten eggs into the pan and gently scramble until just set. Remove and set aside with the bacon.
Add frozen peas and carrots to the pan and stir-fry for 2-3 minutes until warmed through.
Add the chilled rice to the pan. Stir-fry for about 3-4 minutes, breaking up any clumps and combining well with the veggies.
